Stir Fry Beef with Ginger and Spring Onions

Ingredients:

This recipe is good for around 6 pax!

1. 900g of beef flank. (Only part that is suitable for stir frying)

2. 2 packets of spring onions.

3. 2 thumb sized gingers.

4. Sugar

5. Corn / Potato starch

6. Light and Dark Soy sauce

Wash the spring onions and gingers and cut them into strips (Julienning).

Make sure to cut the beef flank meat in the direction perpendicular to the muscle lining. This will ensure that the meat will not be tough.

3. Season the beef flank meats with 2tbs sugar, 3tbs corn/potato starch, 2tbs salt, 2tbs light soy sauce and 2tbs dark soy sauce. Mix well and set aside.

4. With big fire, heat up the wok. Add 5tbs oil then slightly brown the ginger.

5. When the ginger is brown, add in the marinated beef flank. Stir well till the beef is almost well done.

Tip: When stir frying the beef you must be quick! Do not over cook it or else it’ll be very tough.

6. Then add in the spring onions and mix well.

Finally season the mix with a dash of salt (optional) and it is done!

Tip: You will notice the beef is smooth and shining. The trick was to use the corn/potato starch with oil!
