Stir Fry Spicy Lady’s Fingers (Okra) with Minced pork


Ingredients:

1. 500gms of lady fingers (Okra).

2. 500gms of minced pork. (5pax) Can be lesser at around 300gms depending if you need to serve lesser. (3-4pax)

3. 3 tbs of minced garlic.

4. 2 tbs oil.

5. 2 -3tbs spicy prawn chilli paste. (Usually comes in a small glass jar)

1. Heat up a wok until it is very hot.

2. Pour the Lady’s fingers (Okra) into the wok. Nothing is added. Stir every second…

…till you see the wok is stained. It looks burnt but its the slime that has escaped and dried.

At the same time the heat also dries up the lady’s fingers (Okra), making it cooked and ready for later.

Place the Lady’s fingers (Okra) aside. Just soak the wok and wash it to get rid of the dried slime. Make sure the wok is relatively dry before you continue.

Tip: To clean the wok, i usually add water and heat it as i stir to try and dissolve most of the slime before draining and washing. Remember, this is just to get rid of the slime!

3. Heat up the 2tbs oil then brown the minced garlic.

4. Add in the minced meat

Tip: Must try to break up the minced meat evenly and fast. Otherwise, once cooked the chunks are very hard to break up.

Add the lady’s fingers (Okra) once the meat seem cooked. Stir and mix well, and season it to taste. (saltiness)

6. Then add in the 2-3tbs spicy prawn chilli paste and mix well. It is now ready to serve!
