This seaweed soup is an amazing refreshing drink to compliment any meal! Simple to cook, and filled with a perfect blend of saltiness and sweetness that come from the seaweed as well as natural stock. What’s more, it is absolutely nutritious and very healthy for your body such as improving blood circulation.

Healthy Seaweed Soup

Ingredients:

1. 1kg of pork ribs.

2. 1 packet of dried seaweed. (Usually the ones meant for soup like mine can be found in supermarkets)

3. 1-2 packets of Tofu.

4. 1-2 packets of Fishballs.

5. Some spring onions.

Was the pork ribs first. Then prepare a container of hot boiling water. Soak the pork ribs in it for around 10-15mins.

Then, rinse the pork ribs with cold water.

3. Now boil a 3/4 pot of hot water that is meant for the soup. Once it is boiling, add in the pork ribs.

4. Let the pot boil heavily before turning the fire down to medium and letting it boil for 3hrs to get the natural sweet stock from the ribs.

5. Now open the packet of seaweed. Cut them into 1/4 slices.

Tip: Usually some brands of seaweed like mine actually provide their own seasoning and oil. However, i prefer using my own stock.

6. Soak the seaweed until they are soft.

7. Once they are soft enough, strain and put aside.

8. Once the 3 hrs is up, scoop out the pork ribs. Place the fishballs into the hot pot and let them cook until they float. Then scoop them out and place aside.

At this point you may discard the pork ribs.

9. Now place in the seaweed into the pot of stock and let it cook for 45mins - 1hr so that the flavours come out.

After that, add in the Tofu and simply season with salt and a pinch of MSG. It really brings out the flavour with just a tiny bit!

11. And then you are done! When serving, simply scoop up the seaweed in the soup with a pair of chopsticks. Place them into serving bowls filled with your cooked fishballs. Then using a ladle, scoop up the soup with cooked Tofus into the bowls. Make sure to fill the bowls well with the soup!
