This soup boosts your natural immune system with a charge of vitamin A B and C and tastes amazing doing so. Simple to prepare and absolutely perfect to compliment any meal. It is very light and nourishing, and sometimes even great for people who have a lack of appetite.

Healthy Mixed Vegetables Soup

Ingredients:

1. 1kg of pork ribs.

2. 5 medium sized potatoes.

3. 2 carrots.

4. 2 tomatoes.

5. 1 medium sized onion.

6. 2tbs pearl barley. (I use Ayam Brand barley)

Was the pork ribs first. Then prepare a container of hot boiling water. Soak the pork ribs in it for around 10-15mins.

Then, rinse the pork ribs with cold water.

3. Rinse the Barley to wash away the powder.

4. Now boil a pot of hot water (3/4 pot) that is meant for the soup. Once it is boiling, add in the pork ribs. Also add in the barley pearl.

5. Let the pot boil heavily before turning the fire down to medium and letting it boil for 3hrs to get the natural sweet stock from the ribs.

6. Cut the vegetables into chunks. Tomatoes and Onions should be in 1/4 pieces.

The stock should look like this because of the barley.

7. After 3hrs, scoop and discard the bones. Then add in all the vegetable chunks into the soup stock. Let them cook for 15mins. Then season the soup with some salt and a pinch of MSG to taste.

Tip: Do not overcook the potatoes or it will usually break up into fine powder.

8. You are now done! Simply scoop them into serving bowls with enough vegetables and soup!
