For you egg lovers out there, nothing beats a dish of simple yet delicious fried eggs! This omelette recipe is very old school and takes advantage of the french beans to add a crunchy texture to every bite full of egg goodness.
French Brean Omelette
Ingredients:
1. 1 packet (200-250gm) of of French Beans.
2. 6 Eggs.
3. Light Soy Sauce
4. 3 tsp Minced Garlics
Instructions:
1. For the french beans, simply use a knife to assist you in peeling the fibers that run across the edge from both ends.

Soak into water and wash.

Then cut them into small pieces.
4. Crack the eggs into a bowl. Season it with 1 tsp salt, a pinch of msg and a dash of light soy sauce. Beat the eggs well.
5. Heat a wok with 3tbs of oil and brown the 3 tsp of minced garlics.
6. Then add in the french beans and stir fry it for a few mins. Add a pinch of salt.
7. Then when they are cooked, spread them out as flat as possible.
8. Add in the beaten eggs.
Be sure to let the egg cook well so be patient. Give it around 10mins before flipping to the other side.
Tip: The eggs ensure that the ingredients are held together. You can actually use the same techniques in this recipe but for other ingredients such as onions, prawns, Chai Po (preserved tunips/radish).
During this duration you should notice the sides of the egg omelette will have some oil.
10. When time to flip, slowly use a wok spatula to gently lift and slide open the edges to allow the oil to go underneath the omelette.
11. Then simply slide through evenly from the corners and flip the omelette as a whole big piece if possible. Try not to break it.
Tip: Sometimes the omelette might be a little too heavy at segments and you might have difficulty. If you are using a non stick pan, before flipping over, cut the omelette into 1/4 size by using the spatula. It’s easier to flip after.
12. Ensure that you allow the other flipped side to cook for another 10 mins before flipping back.
Notice there are browns all over at this point.
13. Finally break the omelette into chunks and serve!
