This recipe is a great dish to give delicious pork meats some fragrant and delicious taste from the spring onions, with a reasonable amount of gravy to compliment with rice!
Stir Fry Pork with Spring Onions
Ingredients:
1. 5-8kg of lean pork meat.
2. 1 Thumb size ginger, skinned and cut into slices.
3. 2 packets of spring onion washed and cut into lengths of around 10cm.
4. Baking Soda.
5. Light Soy Sauce.
6. Dark Soy Sauce.
7. Corn or Potato starch.
Instructions:
I usually use what my local butcher called the “Fake Fillet” area that looks like this. It is usually very tender.
1. Wash and cut off the extra sections of the lean meat.
2. Be sure to pad the meat dry. Then cut them into 1/2 chunks.

Tenderise all the meat chunks on both sides well.

Put them in a container, add 1 tsp of baking soda to ensure further softening.
5. Mix well and set it aside for around 1 hr at least.
6. Then rinse the meat a few times and strain well.
7. Cut the chunks now into 1/2 cm thick pieces, ensuring you slice perpendicular to the muscle linings.
8. Season the meat pieces with 2tsp sugar, 2 tbs light soy sauce, 2 tbs dark soy sauce, 2tbs corn or potato starch. Mix well.
9. Heat up the wok with 4tbs of oil.
10. Brown the ginger well.
11. Add in the meat and stir fry for around 10mins. See the colour change.
12. Now add in the spring onions and mix well.
13. Cover the wok for 10mins with big fire. This will help reduce juice from the meat.
14. After the time, uncover and mix and stir well once again. Season with salt to taste. It is now done!
