Sambal Fish
Ingredients:
1. 1/2 or whole fish. (I used Red Snapper)
2. 1/2 bowl of the Home made sambal.
3. Sugar and Salt
4. Light Soy Sauce.
Instructions:
1. Wash and pad the fish dry.
Slice a few deep cuts on the fish to allow easier and better cooking later..
Tip: If its the whole fish, you will have to wash the insides and take out its innards. Or try asking the fishmonger to help you with that.
2.
Sprinkle fine salt all over the fish and let it marinate for a few mins.
3. Heat the wok and add some oil.
Fry the fish on both sides until they appear golden brown.
Like this.
Then set the fish aside.
4. With the remaining oils in the wok, add in the sambal. Season it with 1/2 tbs of sugar and a dash of light soy sauce. Stir the mixture well until the sugar dissolves.
5. Now place the fried fish back into the wok and mix it with the sambal well, ensuring every part of it is coated with the sambal.
Slowly like this.
It is done!
