Eggplant or what we locally call Brinjal, is a very delicious vegetable that is soft and flavourful when well cooked. This recipe gives eggplants a well seasoned blend with some spicy sauce and dried shrimps that will compliment any meal!
Spicy Eggplant (Brinjal)
Ingredients:
1. 10-12 small eggplants are best as they are more tender. Otherwise about 3 -4 large ones are fine.
2. 50gm dried shrimps.
3. 1-2 tbs spicy prawn chilli paste
4. 2tsp Minced Garlics
Instructions:
1. Soak and wash the eggplants.
2. Cut off the heads of the eggplants and cut them into quarters if small, and chunks if they are the large ones.
3. Soak the dried shrimps for a few mins before straining them. Separate the shrimps, and keep the shrimp water you soaked them in.

Heat up the wok with 2 tbs oil. Add in the dried shrimps first, and stir fry for a few mins. You should smell the shrimps aroma.
5. Then add in 2 tsp of minced garlics. Brown the garlics well.
6. Then, add in the eggplants (brinjal) and mix them well with the shrimps and garlics.
7. Next, season with 1 tsp sugar, 1 tsp salt and add in the shrimp water. Mix well.
8. Then cover the wok and let it cook for 5-6 mins.
9. Then, add in 1-2 tbs of spicy prawn chilli paste. Mix and stir well.
10. It is now ready to serve!
