This is a very old school and traditional recipe for my family that is sure to whet your appetite especially if you love prawns and noodles! The soup is made of natural prawn stock, so every slurp is 100% natural prawn sweetness! Perfect for any occasion when you want a light and sumptuous meal.

Prawn Noodles


Ingredients:

1. 1kg of pork ribs.

2. 500gm prawns but sometimes may opt for more if i have more than 5 pax.

3. Bean Sprout amounts that are up to your liking, i usually get around 50c to $1 worth.

4. 500gm - 1kg yellow noodle.

5. 1/2 packet of Bee Hoon.

6. 1 packet of Fish Cake. I usually get the 3 in 1 from supermarkets.

7. Some Palm Sugar.

8. Light and Dark Soy Sauce.

1. Rinse the prawns and then de-shell them. Make sure to keep the shells as it is the most important ingredient.

2. Soak the bean sprouts, wash them and make sure to take away the husks.

Soak the 1/2 packet of Bee Hoon until you are ready to cook. When they are softer be sure to cut them into halves.

Rinse the yellow noodles to reduce the oil.

5. Wash the pork ribs and soak in hot water for around 10-15mins.

6. Then rinse the meat a few times and strain well.

7. Prepare a pot of 3/4 water. When it is boiling well, add in the pork ribs and prawn shells. Let it boil for around 3 hrs to bring out the stock.

8. When time is up, discard the ribs and shells slowly.

9. Add the prawns into the pot to let them cook for a few mins. You can take them out once the prawns turn red, do not over cook them.

10. Add in 1/2 small sized palm sugars into the pot. The more you add the sweeter it will be artificially but we just want to reduce the fishy smell of the prawns.

11. Season the pot now with 1 tsp salt, 1 tbs light soy sauce, 1 tbs dark soy sauce and a punch of MSG to taste. Try not to make it less bland as it will not taste nice the moment you add noodles while serving. So, be generous with the flavours.

12. Use a pan to heat up the fish cakes on the side. Then slice them up well.

13. Prepare a wok of boiling water now. You will use it to blanch the noodles and bean sprouts just as you serve them up fresh.

14. When you are about to serve, place the Yellow noodles or Bee Hoon, as well as bean sprouts for a single serving into a big strainer. Place it all into the wok of boiling water for a few seconds to blanch.

15. Then place the blanched noodles and bean sprouts into the serving bowl. Then place the fish cakes slices and prawns on top. Finally pour a generous amount of prawn soup and it is ready to serve!

Tip: You may with to garnish with some white pepper, fresh chilli or fried shallots.
