Mui Fan, or also known as rice in special gravy, is wonderful to eat if you have a craving for something filling and some savoury seafood. The gravy ensures that every spoonful of rice is bursting with flavour that melds the ingredients perfectly in one bite.

Mui Fan (Rice with Savoury Gravy)

Ingredients:

1. Vegetables such as Bok Choy or Brocolli.

2. 2 Squid.

3. 300gms of Fish Fillets, such as Spanish Mackerels.

4. 300gms of Prawn.

5. 3 tsp of Minced Garlic

6. 2 Eggs.

7. 5 tbsp of Corn / Potato Starch with 5 tbsp of water.

8. 2 cups of Rice. Simply cook it normally with a rice cooker. (6-7 pax)

1. Wash and cut the squids, fish, and prawns.

2. Season them with approximate half tbsp of sugar, dash of pepper, 2tbsp of soy sauce and a dash corn or potato starch. Mix them well.

3. Boil a wok of water. Once it is boiling well, add 1 tbsp oil and 2 tbsp salt. It is to season and glaze the vegetables you are cooking.

4. Add in the vegetables and let the wok boil for 3 minutes with a cover. Do not let them get overcooked!

Drain the vegetables and set them aside.

6. Then, pour 1 tbsp of oil into the wok, and start browning some minced garlic.

Add in 4 big mugs of water (2 and 1/2 litres of water roughly). It is good to make more gravy then less as a general rule of thumb. You will need to pour the gravy over the rice and it is always better to have an abundance of it.

8. Once the water is boiling well, add in the seafood ingredients such as the marinated squids, fish fillets and prawns.

9. Let it cook for 3 minutes with the cover on. As the seafood will be easily cooked, make sure to not exceed this approximate timing.

10. Get a cooking strainer and scoop up the seafood ingredients.

Set them aside.

11. Once you are left with the water stock in the wok, season it to taste with low fire.

12. Prepare the 5tbsp corn or potato starch solution, as well as beat the 2 eggs into roughly the same portion in another bowl.

13. Slowly pour the starch solution into the wok as you gently stir the stock into a gravy.

14. Do the same with the beaten eggs. This will enhance the gravy flavour and texture!

15. Finally, simple place the cooked rice into a serving dish or plate, place the seafood and vegetables on it. Then pour the gravy over generously and serve!
