Yusheng or also know as “Lo Hei” is a Singapore created unique local dish meant to be eaten during Chinese New Year annually, where “lo” (literally mixing) means “tossing up good fortune”. It usually consists of strips of raw fish, mixed with shredded vegetables and a variety of sauces and condiments, among other ingredients. The dish is very appetising, and gives you a fresh flavourful balanced crunch consisting of sweetness, sourness and saltiness that will be sure to give your family gatherings a refeshing moment to remember!

Lo-Hei


Ingredients:

1. 3 carrots, shredded.

2. 1 green radish, shredded.

3. 1 white radish, shredded.

4. 1 pack of lime. (close to 20) Squeeze out the juice into a bowl.

5. 3tbs Honey.

6. 1 - 2 containers of Thai Sing brand Lo-hei condiments. (As long as they have the colourful containers of condiments) You can usually buy this off local Singaporean supermarkets.

7. 6 packs of smoked salmon. Cut them into bite sized slices.

8. Abalone if you want to add those too.

1. Shred the vegetables, strain and separate them like this.

Be sure to shred them until they are left with only their central stalks.

2. Prepare a large plate. Arrange the vegetables and Lo-hei condiments like this first. Leave the pre packed Lo-Hei crackers, sauces and peanuts for later.

3. You then set out the rest such as the salmon, abalone, honey and remaining condiments around the main dish. You will only mix them when everyone is around.
