The braised chicken is a delicious recipe that takes advantage of the chicken’s natural sweetness and enhances it with a well seasoned sauce. Wonderful dish to eat with plain rice, or even on it’s own!
Braised Chicken
Ingredients:
1. 1 - 1.5kg of chicken. Be sure to wash thoroughly and pad it dry with tissue towels!
2. Light Soy Sauce
3. Dark Soy Sauce
4. 6 cloves of garlic, with skin intact. Lightly mash them.
5. 1 and 1/4 cinnamon sticks.
Instructions:

Once you wash and pad dry the chicken, simply season the chicken with 2 tbs light soy sauce, 60ml (1/4 cup) of dark soy sauce, 2 tsp of salt. Let it marinate for around 3hrs.

When you are ready to start cooking, transfer the chicken out to another container or tray and set it aside, leaving the marinating sauce. Pour 4 cups of water into the sauce.
3. Heat up the wok, and add 2 tbs sugar and 2 tbs water. Let it caramalise until it turns golden brown.
4. Pour the marinating sauce into the wok.
5. And add in the cloves of garlic and cinnamon sticks. Ensure that all the sugar is melted and the mixture is well mixed.
6. When ready, slowly place the chicken into the wok, breast side facing up. Cover the wok, and let it braise for around 1 hr with medium fire.
Tip: Do make sure to over turn the chicken at the 1/2 hr mark to cook the chicken properly.
7. After 1 hr, remove the chicken. Let it cool and cut it up well.
8. Now mix a solution of 1 tbs corn or potato starch with 1 tbs of water.
9. Then pour the solution into the sauce in the wok to thicken it into a nice gravy.
10. Finally, simply place the chicken on a serving plate, and pour the delicious gravy all over to serve!
