This tomato soup recipe is absolutely delicious and perfect to compliment any meal or even on its own! Super clear with a perfect balance of appetising fresh tomato sourness with salt, you are sure to crave for extra servings once you try it!
Tomato Soup
Ingredients:
1. 10-15 medium sized tomatoes.
2. Olive Oil
3. 1 large egg , beaten.
4. 2 cubes of Knorr vegetable or chicken stock.
5. Some minced garlic.
Instructions:
1. Soak the tomatoes in salt water for a few minutes.
2. Be sure to wash them well and then cut into 1/4 pieces.
3. Heat up a pot with 2 tbs of olive oil.
Brown 2 tsp of minced garlic.
4. Then add in the tomatoes and stir fry for a few minutes until the tomatoes are well coated with garlic and oil.
5. Use a bowl/container and add in around 1/2 volume of water.
6. Pour the water into the pot. Bring it to a boil with big fire and cover the pot.
7. Once it is boiling well, add in the 2 cubes of Knorr vegetable or chicken stock. Let it boil for another 1/2 hr.
8. When it is time, season the soup with salt to taste.
9. Then, simply off the fire and add in some beaten eggs and stir well. It is done!
