Claypot Rice is a savoury way to prepare a filling and hearty meal empowered by the sauces and seasoning with the juice of the ingredients infused into every grain of rice. Typically, the rice is cooked with Claypots where the name is derived off. However, this recipe is an easier way to prepare softer rice that can be kept warm and refrigerated without fear!

Claypot Rice (Rice-cooker)

Ingredients:

This cooking portion is meant for around 4-5 pax.

1. 3 pieces of chicken breast or thigh meats, deboned.

2. 10 mushrooms (Soak overnight with water)

3. 2 Chinese Sausages.

4. 1/2 cup dried shrimps.

5. Dark soy sauce.

6. Light soy sauce.

7. Sesame Oil.

8. Salt

9. Corn starch or Potato Starch

10. 2 cups of Rice.


Instructions:

1. Wash and cut the chicken meats into chunks. Season with 1 tbsp light soy sauce, 2 tbsp dark soy sauce and 1 tbsp sesame oil. Then be sure to also add 1 tsp of corn or potato starch. Mix well and let the meats marinate until you are ready to cook.

2. Peel the skin of the chinese sausages. Then slice them up into slices.

3. Soak the shrimps until they soften.

4. Slice the mushrooms.

5. Wash the rice well and strain it dry. At the same time, strain the soaked shrimps but keep the shrimp water.

6. Heat up the wok with 1 ladle of cooking oil.

7. Add the marinated chicken and stir fry until the meats turn paler and slightly firm - but not fully cooked.

8. Set them aside.

9. Now heat up 2 ladles of oil in the same wok without washing. Add in the mushrooms and dried shrimps. Stir fry until the mushrooms appear golden brown.

Then add in the washed uncooked rice. Be sure to stir and mix the rice with the ingredients well, and that every grain is coated with the oil.

11. Add in 1-2 tsp of salt and 2 tbsp of dark soy sauce. Mix well until every grain of rice is coated dark brown.

12. Now transfer the rice into the rice cooker. You may also use a clay pot if you wish to cook it the traditional way at this point. Add the shrimp water into the cooker or pot.

Tip: Also, add some water into the wok and stir it around to wash out the leftover sauce. We are not wasting the rich sauce here!

Tip: Pour the water into the rice cooker or clay pot.

Tip: Be sure to adjust and add more water required for the rice cooker!

13. Heat up the rice cooker or clay pot.

Tip: After 10mins, check on the rice cooker and ensure that there is still water visible and not entirely dried up.

14. Add the sausages and chicken into the mix. Let the rice and ingredients cook until serve.

Tip: When serving, you may use a chopstick to help break the rice up and loosen the ingredients. Mix them well to serve easier.
