Nothing beats a savoury and spicy curry like homemade curry! The blend of spices, with the natural sweetness of the potato and the chicken, is a traditional favourite across all races in Asia, and this influential Indian cuisine is the perfect complement to any fresh bread or rice!
Chicken Curry
Ingredients:
You will need a blender.
1. 1 whole chicken or chicken parts you wish to eat. (breast meats or thighs)
2. 2 packets of curry powder of around 400g. This is enough for my big pot enough for 6-8 pax.
3. 1 packet of 200ml coconut cream.
4. 4 large potatoes. Cut into quarters.
5. 1 medium red onion.
6. 6 pieces of candlenut.
7. 6 cloves of garlic.
8. 500ml of water for dry curry, or 1000ml for regular curry. Up to your preference!
9. 2 chicken stock cubes. I use Knorr brand.
10. Salt and Sugar for seasoning.
Instructions:
1. Wash and cut the chicken meats into smaller chunks, potatoes into chunks, the onion, candlenuts and garlic into small pieces.
2. Place the onion, candlenuts and garlic into a blender. Add in 1 cup of water.
3. Start blending.
4. Transfer the blend into a container and add in the curry powder. Mix well into a paste.
5. Heat up a wok or pot with around 6 full tbs of oil.
6. Stir fry the curry paste until the aroma is strong.
7. After that, add in the chicken meats. Mix well.
8. Then add in the potatoes. Mix well.
9. Then, add in the 500ml or 1000ml water and begin stirring well.
My family prefers the drier version.
10. Cover and let the curry mix cook for around 20mins with high heat.
11. After that, uncover and add in the chicken stock cubes.
12. As well as the coconut cream.
13. Mix well and cover once again. Let it cook for another 20mins.
14. Finally season with salt and sugar to taste.
