Chicken Cabbbage Stew

Ingredients:

1. 1 Large Cabbage

2. 1 Whole chicken, or around 6 chicken breast or thigh meats.

3. 2-3 Carrots

4. 5-6 Potatoes

5. 3-5 Bay Leaves

6. Plenty of Chicken Bones.

7. Chicken Cocktail Sausages (Optional)

8. 1/2 tbs Peppercorns (Optional)


Instructions:

1. Wash the chicken bones, take out all the innards and guts and then place the bones in a container.

2. Wash the chicken meats and pad dry, place them onto plates that you will steam them on. Then sprinkle fine salt over the pieces.

3. Skin the potatoes and carrots. Be sure to cut them into chunks and soak in water. Set aside until ready to cook.

Wash the cabbage and then cut it into big pieces. Soak in the water for awhile. After which, be sure to strain it dry and leave it aside until ready to cook.

5. Soak the chicken bones in hot water for 10-15mins.

6. Then rinse them in cold water.

7. Prepare a wok of boiling water for steaming the chicken meats.

8. When it is boiling well, place the plates of chicken meats in and let it steam with big fire for around 20mins. Ensure that you cover the wok.

9. When it is steamed, you should notice a lot of stock. Keep the stock for later use!

10. Prepare a pot of 3/4 boiling water.

11. When the pot is boiling well, add in the Chicken Bones as well as the Bay Leaves.

Let it boil for around 2 and 1/2 hrs with medium fire.

Tip: You may also wish to add the peppercorns here if you want it to be a little spicy.

12. After that, discard the bones.

13. Place in the carrots and potatoes.

Pour in all the extra chicken stock from the steamed chicken meats. Let it boil for another 15mins.

15. Then transfer the cooked carrots and potatoes into a container and set aside until serving.

16. Add in the cabbage pieces and let them boil for around 15mins till they appear softer.

17. Season the pot with salt to taste. You should find it very sweet as well as a little salty.

18. When serving, simply place in each serving bowl some carrots, potatoes, and chicken meats.

19. Then simply pour the soup and cabbages generously into each bowl. It is done!
