The wonders of bacon is that it’s a great flavor and aroma to be the base of any dish. Fry it together with rice, and u have a very fragrant and delicious and simple dish that will satisfy your hunger with every bite!
Bacon Fried Rice
Ingredients:
You may wish to cut down the portions if you prefer a serving that is lesser. This is for around 4 pax.
1. 2 Cups of Rice
2. 2 Packets of Bacon
3. 1 - 2 Eggs
4. Maggie Seasoning (The bottle can be bought from most supermarkets)
5. Spring onion, chopped.
6. Salt
7. 1 medium sized onion.
Instructions:
Like most fried rice dish, it is always recommended to pre-cook the rice on the night before of cooking. You can place the cooked rice in the fridge and let it warm up a little to room temperature a few hours before cooking. Use chopsticks to break up the rice when you do.
1. Cut the bacon into 1 inch slices.
2. At the same time chop the spring onions as well as medium onion.
Place them into a container and set aside until ready to cook.
3. Heat up a preferably non-stick wok with high heat.
Brown the bacon pieces until they turn dark brown.
4. Scoop up the fried bacon pieces and set aside.
There should be bacon oil left in the wok.
5. Now brown the onion in the remaining bacon oil collected in the wok and stir fry until they appear to soften.
6. Crack the eggs into the wok and break them up into pieces as you mix well with the fried onion pieces.
7. Then add in the cooked rice. Stir and mix well.
8. When well mixed, add in a few dashes of Maggie seasoning. Then proceed to season with 2 tsp of salt or to individual tasting. The rice should be slightly brown when well fried.
9. Add in the fried bacon pieces. Stir and mix well.

Finally add in the spring onions and mix.
11. Transfer the fried rice into a cooking rice pot to keep warm until serving. It is done!
