White fungus has been appraised for its medicinal benefits, namely anti-inflammatory and anti-tumor. In Chinese families, it is commonly used in soups cooked for soothing purposes like nourishing the bodies, healing dry coughs and clearing heat in the lungs. Taking advantage of this, the White Fungus Soup recipe blends it with the natural sweet stock from chicken and some canned mushrooms to create a delicious nourishing soup that is sure to warm your tummy!

Ingredients:

1. 2 pieces of Chicken Breast Meats.

2. 1 and 1/2 Dried White Fungus (Soak overnight)

3. 1 can of preserved mushrooms.

4. Lots of Chicken Bones.

5. Light Soy Sauce

6. Corn or Potato starch.

1. Soak the White Fungi overnight and let them expand.

2. When about to cook. rinse and cut off the brown parts. Then tear them into smaller pieces. At the same time, cut the canned mushrooms into 1/4 pieces.

3. Cut the chicken breast meats into cubes.

4. Wash the chicken bones and discard the guts. Make sure to wash inside out thoroughly.

Then soak the chicken bones in hot water for 10-15mins.

6. After that, rinse them with cold water.

Get ready about 3/4 pot of boiling water. When the water is boiling well, add in the chicken bones and let it boil for 2-3hrs.

8. Season the chicken breast cubes with 1 tsp light soy sauce and 1 tsp corn or potato starch.

9. When the 3hrs is up, scoop and discard the chicken bones from the pot.

10. Then add in the white fungus pieces. Cook in the pot for 45mins - 1 hr.

11. After that, add in the seasoned chicken breast cubes and canned mushrooms and let it cook for another 15mins. Season the pot with salt to taste.
