This sweet and sour pork recipe is guarantee to please your taste buds with extremely flavourful pork meats that is entirely made from fresh ingredients. The dish is perfectly balanced with meats and vegetables and can be eaten well with plain rice!
Sweet and Sour Pork
Ingredients:
1. 800gm of lean pork collar meat.
2. 1 red and 1 green Capsicums. (Bell peppers)
3. 1 medium sized tomato.
4. 1 medium sized onion.
5. Tomato Ketchup.
6. Vinegar.
7. Some Corn or Potato starch.
8. 1 tsp Baking Soda
9. Light Soy Sauce.
10. 1 Egg
11. Sugar
Instructions:
1. Cut out the excess fat from the pork collar meats.
2. Cut them into chunks of around 2 inches.

Place the meats into a container and add 1 tsp of baking soda. Let it marinate for around 1 hr to further soften.

After that simply rinse in water for a few rounds.
5. Strain and place into a container.

Season the meat with 1 tsp salt, 1 tbs light soy sauce, 1 tbs corn or potato starch, 1 egg. Mix well.
7. To prepare the sauce base, mix 3 tbs sugar, 3 tbs tomato ketchup sauce, 3 tbs of water and 2 tbs of vinegar.
8. Cut the red and green capsicums (bell peppers) into 1/2 or 1/4 chunks. Be sure to remove the seeds. Likewise, cut and wash the tomato and onion as well.
9. Set them aside and be sure to place the onion pieces differently into another container.

Heat up a work with around 1/2 capacity of cooking oil. This will take around 15mins at least to heat up.

While waiting for the oil to heat up, prepare a container with around 15 tbs of corn or potato starch. You will have to dip and coat the pork meats piece by piece into this starch for frying. Divide as many batches of frying as you need as the amount of meat portion is quite a lot.
12. When the oil is heated well, place in the coated meats until the wok is full. Fry until they appear golden brown.
13. Then, be sure to scoop them out and strain well. Repeat these two steps until you successfully fry all the meats.
14. When all of your meats are golden brown and strained, place all together on a paper towel and set aside to cool.
15. After some time, simple heat up the oil again and then pour back all the meat to fry a second round, this time for around 5 mins. This is to make the pork extremely crispy! After that scoop and strain and set aside.
16. Now heat up the work with around 2 tbs of cooking oil.
17. Add in the onion and stir fry until soften.
18. Then add in the tomato, red and green capsicums (bell peppers) and stir fry with the onion for a few mins.
19. Add in the sweet sour sauce, mix well with the vegetables for a few mins.
20. Prepare a solution with 1 tsp corn or potato starch with 2 tsp of water.
Pour it into the vegetables to thicken the sauce.

Finally, add in all the fried pork meats into the wok. Mix well until all of the meats are coated with the sauce.
